Vegetarian “Codfish” For Christmas Eve

An ideal dish for Christmas Eve if you do not want meat on your menu.
Ingredients: 1 kg of potatoes, 1 onion, 2 cloves of garlic, 1 bunch of fresh parsley, 2 dl melted tomato puree or 50 grams of fresh tomatoes, 1 bay leaf, salt, pepper and extra virgin olive oil to taste, a pinch of turmeric.
Method of preparation: Wash the potatoes, peel and cut into slices. Fry finely chopped onion, and place an array of potatoes, then put chopped garlic and parsley, and 1 to 2 tablespoons of tomato puree. Add salt, pepper, put turmeric and pour olive oil, and at the end pour enough water to cover the potatoes. Put the bay leaf and cook over low heat until the potatoes are tender. During this time, water must evaporate so much that the potatoes remain in the thick juice. Do not mix the meal, but shake a bowl very well. Thus prepared potatoes reminiscent of codfish because of garlic, tomato and olive oil. Vegetarian “CodFish” is even tastier if you are using fresh tomatoes.
