Sweet potato and lentil soup

This delicious sweet potato and lentil soup is an excellent choice for cold autumn days.

Rich in spices and vitamins, and with a piece of whole wheat bread, can be a delicious and healthy meal.



200g red lentils,
300 g white sweet potato, cut into cubes,
100g orange sweet potato, cubed,
2 carrots, cut into slices,
1/8 teaspoon red sweet pepper,
1/8 teaspoon nutmeg,
1/8 teaspoon curry powder,
pinch of oregano,
pinch of asafoetida,
3 tablespoons olive oil,
handful of fresh basil.

On olive oil, fry asafoetida and after a few seconds add the lentils and all the spices.

Cook for a few minutes and add the carrot and sweet potato.

Cook until the lentils become soft.

Very briefly mix the soup with stick-blender, add the chopped basil and at the end sprinkle with salt and pepper.
