Spinach, Popeye’s favorite food, has antioxidant and anti-inflammatory properties. Spinach is rich in flavonoids and carotenoids, which have anti-inflammatory and antioxidant effects. Two particularly important carotenoids are lutein and zeaxanthin, which are important for the eyes. They protect their health and prevent many eye diseases, particularly macular degeneration. Spinach is an excellent source of nutrients such as vitamin C and E, beta-carotene, manganese, zinc and selenium, which defend the body against a number of diseases associated with antioxidant stress. This is particularly important for the health of blood vessels, which are prone to inflammatory processes. You can include it in many spring recipes.


Ingredients: 400 g of spinach, 300 g of smoked tofu, 2 tablespoons of extra virgin olive oil, 2 cloves of garlic, 2 crust pastry strudel without eggs, 1 tablespoon of soy sauce, 1 tablespoon of whey, a pinch of salt, pinch of turmeric, sunflower oil for frying.
Method of preparation: In a little extra virgin olive oil previously heated in a pan put spinach, pinch of turmeric, smoked tofu, tablespoon of soy sauce, chopped garlic and a little whey. Fry them for a one minute and remove from heat. Crust pastry put one on another and cut them into 8 squares. Put the filling on the crust on each side and then switch the edges of the crust and gently wrap rolls. In the heated sunflower oil put rolls and fry them half minutes on each side. Rolls are done when they take on a golden color. Drain them on paper. You can serve them with your favourite sauce, and with some arugula salad with olives and feta cheese..
