Spring Couscous Salad


1 cup couscous, 3 garlic cloves, 1 onion, several tomatoes, 2 peppers, 1 bigger cucumber, 1 small tin can of corn, 250 grams of champignons or half eggplant, 1 piece of parsley, extra virgin olive oil.
If desired: olives, raisins soaked in the water.
For dressing: 1 lemon juice, 3 tablespoons oil, salt, pepper and spices as desired, 1 fresh leaves of parsley or chives.


Cover the cup of couscous with two and a half cups of hot water and leave it covered for 10 minutes. Cut the garlic and onions. Clean the fresh vegetables, wash them and cut them into desired shapes. Mushrooms or eggplant fry in a little oil. Move the couscous into the serving bowl and, when it is slightly cool, add fresh vegetables, corn can and pickled mushrooms (or eggplant). For salad sauce, mix lemon juice, oil, spices, salt, and pepper. Stir everything, and then add fresh chives or parsley. If you want a more exotic flavor, add raisins that have been previously soaked in water.
