Spicy South Indian Chili And Tomato Rice

First you need to make a spice masala with following ingredients:

1½ teaspoons oil, 1 teaspoon coriander seeds, 1 teaspoon urad dal, 3 large red chilies,
¼ teaspoon of fenugreek seeds, 1 tablespoon dry coconut.
Other ingredients: 5 large tomatoes, blanched, peeled and chopped,1 teaspoon oil, 2-3 cups water, 1 teaspoon salt, 1 cup of basmati rice, 1 tablespoon ghee or melted butter, 1 teaspoon mustard seeds, 10 fresh curry leaves, 3 large red chilies, sliced, ½ teaspoon of asafoetida.


How To prepare the spice masala: Heat 1½ teaspoons of oil in a wok on the moderate heat. Put in the red chilies, coriander and urad dal. Stir all together occasionally, for 4-6 minutes or until they become darken in colour. At the end, put in the coconut and fenugreek, and stir until the coconut becomes golden brown. Remove all and put to a spice mill. Grind the spices to a powder and put aside.
How to prepare the tomatoes: Put the ghee or melted butter in a wok over moderate heat. When the ghee is hot, put in the mustard seeds. They will crackle and then, you can add the curry leaves, stir quickly, add the chilies and fry them for about 2 minutes. Just before adding the tomatoes sprinkle in the yellow asafoetida powder, saute quickly and then add the chopped tomatoes.
Cook for about 5-6 minutes until the tomatoes get soften. Put the spice masala into the tomatoes, stir and cook for one minute more and then remove from the heat.
How To prepare the rice: Bring to the boil the water in a 1 litre covered saucepan. Warm 1 teaspoon of oil in a 2 litre saucepan over moderate heat. Pour in the rice and stir for 2-3 minutes until the rice become goldenbrown in color. Then, add the boiling water, and bring water to a full boil. Reduce the heat to very low, cover it and simmer, without stirring, for about 20 minutes. Put the pan aside from the heat and let the rice, covered, for 5 minutes to allow the grains to firm up.
At the end, stir rice in the spicy tomatoes, mix all together, rice and tomatoes gently with a fork to mix evenly. Serve this south indian speciality hot.
