Shak - potato and chard sabji1


5-6 medium sized potatoes, chopped into slices,

500g Swiss chard,

50g feta cheese, cut into cubes, (or, better, panir cheese),

pinch of roman cumin,

pinch of black mustard,

1/2 teaspoon curry powder,

two pinches of asafoetida,

1/2 teaspoon garam masala,

1 tablespoon of cooking cream,

a pinch of dried parsley,

salt to taste,

pinch of freshly ground pepper,

tablespoon olive oil or ghee.



In olive oil or ghee, fry black mustard seeds (until it starts to crackle) and roman cumin seeds. Add  asafoetida and after a few seconds,  add the sliced and salted potatoes. Fry for a few minutes and add the chopped chard. Cover the pot and cook for a while. If necessary, add water (if the potatoes are sticking to the bottom). When the potatoes and chard are cooked, add the other ingredients: curry powder, garam masala, dried parsley, freshly ground pepper. Mix all together well and at the end add cooking cream and cubes of feta or panir cheese. The Shak is ready to serve;-) Serve it together with chapati and enjoy in the taste of mother India!
