Pizza Topped With Baked Tomatoes

Just a little more effort and some aromatic herbs, and pizza from natural ingredients becomes something special. Thus baked and “caramelized” tomatoes you can add in any kind of pasta sauce.


For the dough: 200 g flour, ½ teaspoon salt, 1 tablespoon fresh lemon thyme leaves, 1 package of dry yeast, 130 ml of hot water, 2 tablespoons of olive oil. For the filling: 500 g cherry tomatoes, 2 tablespoons olive oil, 1 tablespoon brown sugar, 2 tablespoons of fresh lemon thyme leaves, 125g of mozzarella, salt and freshly ground pepper.

Preheat oven to 220 degrees. Cover the baking pan with baking paper. Mix in the flour salt and lemon thyme, and then make a dent in it and pour into it dry yeast. Pour water and oil and knead the dough. Leave it to rest while you prepare the filling. For the filling, wash and dry the tomatoes. When you strongly heat the pan, add olive oil and cherry tomatoes. Sprinkle them with sugar and leaves of lemon thyme. Saute until the tomatoes begin to caramelize, then reduce the heat and cook for another 10 minutes. Cut mozzarella cheese into slices. Shape the dough into 1 large or 2 small pizzas and spread over the dough baked tomatoes and mozzarella slices on them. Season with salt and pepper. Put in a very heated oven and bake until the cheese melts and the edges become darkened and crispy, it is about 10 minutes. Enjoy it!
