Pizza Margherita

Mmm... pizza!

Pizza Margherita is one of the simplest pizza. It is prepared with two kinds of cheese, tomatoes and spice herbs.



2 tablespoons olive oil,
550 g ripe tomatoes, peeled, chopped or 400g drained canned tomatoes,
1 teaspoon oregano,
1 teaspoon thyme,
150 g Mozzarella cheese, roughly shredded,
2 tablespoons grated Parmesan cheese,
Salt and freshly milled pepper.


Fry the tomatoes on the olive oil for about 5 minutes. Add the spices and cook for another 5 minutes until almost all the liquid has evaporated. Season with salt and pepper. On the rolled dough evenly spread tomato. Leave a little tomato for the top of the pizza. Sprinkle with mozzarella and Parmesan cheese, add remaining tomatoes, a little salt and pepper. Bake pizza in the oven at 250 degrees C, about 12 minutes. At the end you can garnish pizza with fresh basil and olives.
