Palak Paneer – Spinach With Cheese

PALAK-paneer (spinach with cheese) is traditional Indian vegetarian dish. It is made of fresh spinach (also can be used FROZEN SPINACH). Instead paneer cheese, you can use tofu.

Paneer is easy to make (it takes at least 2L of milk and a little vinegar or lemon juice). The original process of making this dish is to cook spinach in a tomato sauce, with spices (quite hot spices), long enough until everything is converted into a homogenous mixture of green color, but you can also try not to cook the spinach too long, in order to maintain its nutrients. Ingredients (for 2 persons):

250 g spinach (frozen mashed, frozen chopped, fresh chopped or mashed fresh,
2 medium-sized tomatoes (blended in a blender or mash well),
A pinch of cumin,
2 bay leaves,
chili walnuts,
1/3 teaspoon turmeric,
salt (if desired),
paneer (100 grams),
oil or ghee for frying.

The method of preparation:

On the heated oil, add cumin and bay leaf and fry until cumin release odor and gets discolored.
Add tomato puree and spices (turmeric, chili powder – if you do not like angry flavor, add red pepper) and cook over low heat for 5-10 minutes, until the water has evaporated and the tomatoes do not change color.
Add spinach, salt, cover and leave for a few minutes to soften spinach.
Add paneer and stir (if you like more sauce, add a little water to taste and thicken every few minutes).

Serve with Indian bread (paratha or puri), which is the best combination, or with basmati rice and long grain rice, or bread.
