Mozzarella pizza without tomato sauce1


*for dough:

300 g wheat flour (1/3 integral flour),

10 g of yeast (fresh or dry),

tablespoon sesame seeds,

a handful of sunflower seeds,

salt to taste,

little sugar,

tablespoon of refined oil,

lukewarm water.

*for  surface:

300g mozzarella, cut into thin slices,

pinch of crushed dried rosemary,

1 teaspoon oregano,

a little grated smoked cheese,

a few green olives.




First make a dough. Mix flour, salt, yeast, little sugar, sesame seeds, sunflower seeds and refined oil and start to pour lukewarm water into it. Knead the dough until it is not too soft. Put the dough aside until it grows (about half an hour). Then you heat the oven on the 250 c degrees.

In a one – pot roll out the pastry quite thinly, over-sized of casserole. Pour the oil on the bottom of casserole and then put the thin pastry into it. Fold the excess dough from the sides and make a fence at the ends of the pan.  Then evenly over the dough arrange the thin slices mozzarella, a little grated smoked cheese and a few green olives, pinch of crushed dried rosemary and 1 teaspoon of oregano. Bake it in the oven about 11-12 minutes. :-))
