Indian muffins




2 cups of corn flour,
1 cup whole wheat flour,
1 teaspoon baking powder,
⅓ cup roasted and ground hazelnuts,
1 tsp of ground coriander,
1 tsp ground cumin,
1 tsp turmeric,
1 teaspoon sweet paprika,
¼ teaspoon cayenne pepper or hot paprika (according to taste),
1-2 tsp salt,
1 tablespoon red or white sesame,
1 tablespoon black mustard,
1 tablespoon of chia seeds (you can replace them with flax seeds),
2 ½ cups of mineral water,
½ cup of unrefined sesame oil (or coconut).


Preheat oven to 180 ° C. In a bowl, mix well the dry ingredients. In a frying pan, in one tablespoon of hot sesame oil, fry black mustard seeds, you’ll know that they are fried when they begin to crackle. Add them to the dry ingredients and slowly pour mineral water, stirring constantly. Coat a baking sheet with oil and pour the mixture. Bake in the oven for about 40 minutes.
