Olive oil is rich in antioxidants and with healthy monounsaturated fatty acids. When in diet usually oil is replaced with olive oil, that may cause a significant decrease in blood cholesterol.


So, we can use extra virgin olive oil as dressing for the various salads, for frying the spices before cooking our favoured vegetables. Unsaturated fatty acids, vitamin E, sterols and polyphenols reduce blood cholesterol, the risk of atherosclerosis and certain types of cancer by preventing harmful processes such as oxidation of fats in the body. Unsaturated fatty acids from olive oil act to reduce LDL cholesterol, the so-called bad cholesterol that can clog blood vessels. It is an indisputable and positive his role in diabetes, hypertension, prevention of gallstones, stomach and duodenal ulcers, obesity and constipation.
