Croquettes of Buckwheat

Ingredients: 400 grams buckwheat, 100 grams of hard paneer cheese (or tofu), 1 cup powdered milk, 1 teaspoon saffron, 2 onions (or teaspoon asafoetida), buckwheat or white flour, butter, salt. Method of preparation: Buckwheat wash and soak in cold water to swell. Onions cook together with buckwheat in water. When buckwheat become tender, drain it and shake out in a bowl, add the crushed paneer cheese, saffron, salt and milk so that it becomes a thick mixture. Shape the croquettes with spoon, roll them in flour and place in a baking pan that is richly buttered. Bake in preheated oven. They’re done when they are golden in color and crusty.


Croquettes of Rice

Ingredients: 2 cups rice, a pinch of turmeric, curry, flour, salt, oil, bread crumbs. Method of preparation: Cook the rice in salted water and allow to drain and cool. With round shape spoon remove the rice, roll in a mixture of water, flour, turmeric and curry, then roll in bread crumbs and fry in hot oil.

Croquettes with Cheese

Ingredients: 350 grams of cottage cheese, 100 grams of flour, a pinch of turmeric, a little water, half a teaspoon of baking soda, salt, oil. Method of preparation: Cheese get mashed, add the flour, baking soda, turmeric, little water, salt and mix well until you get uniform solid mass. Shape croquettes with spoon, dip them in bread crumbs and fry in hot oil.
