Baked Beans with Leek

Ingredients (for 4 persons): 450g leeks, 400g cans of beans, 25ml olive oil, 1.5 tablespoons of plain flour, 150ml soy milk, 700g potatoes (cut into thin slices), salt to taste, pinch of curry.


Method of preparation:

Preheat oven to 200 C degrees . Boil the leeks until tender, then drain leek leaving 150ml of cooked liquid. Heat the olive oil, add the plain flour, and then cook for 1 minute stirring all the time. Add the soy milk and vegetable stock, bring to the boil, stir continuously until you get a creamy sauce. Put the leeks and beans from a can in the baking pan (for oven). Pour over the sauce you have made. Cover with potato slices the entire top surface. Sprinkle all with a little olive oil and bake in oven for 35-40 minutes until tender and gets golden brown color.
