2. Native American Black Bean Soup

1 larger chopped leek,
5 tbsp. of some oil,
3 cloves of garlic,
2 lb of precooked black beans,
1 cup of water,
1tsp. ground pepper,
½ tsp. of salt

In a cooking pan heat the oil and add chopped leek, stir it until it becomes golden. Crush the garlic and add it. Take half of the beans and mash it with fork, and the other half leave whole. Add mashed and whole beans to the pan and pour in the water. Stir everything and then add salt and pepper. Lower the heat and let it boil for 40 minutes while stirring occasionally. You can use canned black beans instead of regular, which you have to cook in advance. In this case add less water but add the liquid from the canned beans.

    What are the white cubes that look like cheese or tofu? I don’t see anything like that in the list of ingredients.

      I didn’t know these comments were about all of the recipes. My question about the white cubes/chunks is directed at the first recipe, Native American Succotash.

        This is one of the variants of this recipe. You can also add pieces of fresh hard cheese. Thnx.
