Zucchini-Eggplant SaladPhoto by megansquire


1. Spring salad

• 300 g of zucchini
• 150 g of chopped carrots
• 200 g of tomatoes
• 2 spring onions
• 100 g of sweet corn
Salad Dressing:
• 100 ml of water
• 1 tablespoon of vinegar
• 2 tablespoons of oil
• 2 teaspoons spice mixture

Wash, dry and grate the zucchini and carrots into thin strips and cut tomatoes into slices. Cut onions into thin rings. In the serving plate arrange in a circles row of zucchini, carrots, tomatoes, onion rings, and put the corn it in the middle of the plate. Mix spice mixture with water and vinegar and let it sit for about 15 minutes, then add the oil in the dressing. Pour over the salad just before serving.
