Winter Warm-Refreshing Spinach Soup

This soup is warm-refreshing and uplifting in the cold winter days. You can determine the density of it, depending on how much of flour you place in the roux.
Ingredients: 350 grams of spinach, 40 grams of extra virgin olive oil, 30 grams of flour, 1 garlic (or half a teaspoon asafoetida), 1.25 liters of water, parsley, salt, pepper, a pinch of turmeric. Method of preparation: You should to cook cleaned and washed spinach in salted water for 5 minutes. Then you chop the spinach. From oil and flour you make a light roux and then fry garlic or asafoetida on it. Add a pinch of turmeric and then pour roux with soup or water in which you cooked spinach. The soup will be tastier if you add a little milk or cream. Finally, add chopped fresh parsley and pepper to your taste. You can mix it with a blender stick if you like it in that way. Thick and creamy.
