Winter Tomato Soup With Ravioli

Soups are a great choice for your menu in the cold months. Prepare soup whose flavor irresistible draw your warm smile on cold days.
Ingredients for 4 people (8 plates): 1 tablespoon extra virgin olive oil, 2 cups of mixture of peppers and onions, diced, 2 cloves garlic, chopped, ¼ teaspoon ground red pepper (optional), 800 g of peeled tomatoes (or chopped fresh tomatoes), 5 dl vegetable stock, 3 dl of hot water, 1 teaspoon dried basil (or marjoram), 200 g ravioli of your choice (best domestic wholegrain), 2 cups diced pumpkin, freshly ground pepper to taste. Method of Preparation: Heat the oil in a large pot for browning at high or slightly high heat. Add a mixture of peppers and onions, garlic and red pepper. With stirring, cook the ingredients for 1 minute. Add tomatoes, broth, water and basil (or to taste marjoram). Put on a strong fire to a boil. Add the ravioli and cook for 3 minutes while stirring. Add sliced pumpkin and continue to cook for about 3 minutes (until the pumpkin becomes silky soft). Season with pepper and serve.
The soup can be stored and kept in the refrigerator up to 3 days.
Time of preparation 25 minutes.
