Vegetarian omelette “Easy Morning”

Ingredients :

250 grams of cheese or plain tofu ,

30 g smoked cheese or smoked tofu ,

1 seitan sausage ,

1 cup of cooked corn ,

1 grated carrot ,

a handful of chopped olives ,

chopped fresh parsley for sprinkling

2 tablespoons of oil or butter ,

half a teaspoon of asafoetida ( replacement for leeks , shallots and chives ) ,

1-2 tsp of salt ,

1 small ripe of red peppers cut into strips ,

half a teaspoon of turmeric and sweet paprika ,

2 tablespoons of sour cream .

options , a little salt and black pepper ( very little ! )

Method : Heat the oil or butter in a large skillet or wok on medium heat , add the asafoetida and turmeric and stir. Add the grated carrot and finely chopped peppers and fry a little. After 5 minutes add the crumbled cheese or tofu ( smoked tofu and seitan sausage ) and stir 2 min . Add corn grain , olives , salt , sweet paprika , black pepper and salt . Stir for another minute. Remove from heat and add grated smoked cheese (if you did not put smoked tofu ) , stir in 2 tablespoons of sour cream and sprinkle with parsley.
