1. Tasty black beans salad

¼ cup smoked tomato vinaigrette
1 can (425 g) not salted black beans, rinsed and dried
1 teaspoon of cumin
2 cups of corn,
50 g of smoked mozzarella, diced
1 cup of mini tomato quarters
¾ cup of largely chopped avocado
½ cup of finely chopped red onion
¼ cup of fresh chopped cilantro

Firstly combine vinaigrette, beans, cumin, salt and pepper to taste, in a large bowl, and leave it to the side. Then heat the pan to medium high heat. Add corn and stir occasionally until it gets lightly browned, approximately for 4 minutes. Take the pan off the heat and leave to cool. Add corn and other ingredients to the mixture of black beans and unite. Leave to cool until ready to serve.
