Sandwich of toasted polenta

Ingredients:
cooked and then fried polenta,
crystal salad or radicchio,
50 g tofu,
1 dcl of soy milk,
2 tablespoons chopped fresh red peppers,
2 tablespoons mayonnaise without eggs,
tablespoon chopped fresh parsley,
white pepper.

Method:

Cooked polenta cool in the mold, then cut into squares that you will fried. Mix the remaining ingredients, apply on the polenta and garnish with lettuce or radicchio.

Polenta is especially recommended in summer because it is easy to digest. Tofu cools the body, parsley is rich in vitamin C and minerals you lose through sweating.
