Sabji with potatoes and broccoli

Ingredients:

4-5 large potatoes (chopped into slices),

2 large carrots (cut into slices),

one big broccoli,

pinch of asafoetida,

a pinch of dried rosemary,

half a teaspoon of mustard grain,

2-3 bay leaves,

1/2 teaspoon of curry powder,

1/2 teaspoon of garam masala,

one teaspoon of dry parsley,

one teaspoon of oregano,

salt to taste,

one teaspoon of ground black pepper,

pinch of turmeric,

1 big tablespoon of ghee, or olive oil.

First heat the pot and put  into it the ghee or olive oil. When is warm put into it dried rosemary, asafoetida, mustard grain, bay leaves, stir a few seconds and add a sliced carrots. Stir a little and put the lid on the pot. After few minutes add a potatoes. Add salt, ground black pepper and  curry powder. Stir it and put the lid on the pot and cook on the low heat to fry potatoes and carrots in its own steam. Add a little water if necessary, in the case that the potato is adhered to the bottom of the pot. If not, it is better without adding the water.

Clean the broccoli and prepare every little piece of broccoli for cooking.

In another pot cook broccoli. When it is cooked put broccoli aside without water.

Sabji should be done after 15-20 minutes and then add the other ingredients: 1/2 teaspoon of garam masala, cooked broccoli, one teaspoon of dry parsley, pinch of turmeric, one teaspoon of oregano. Mix all well and remove from heat. Serve it together with chapati or paratha. Enjoy it!
