Quinoa Salad

Whole grains provide for the body fiber and the necessary vitamins, such as vitamin E. Try a light and very nutritious salad.

ingredients (4 persons)
1 cup quinoa
2.5 cups of water
3 tablespoons flax seeds
3 tbsp sunflower seeds
3 tablespoons pumpkin seeds
¼ cup sesame seeds
1 cup cooked corn (can be from a jar)
a pinch of asafoetida
1 handful of arugula
3 tablespoons extra virgin olive oil
½ teaspoon salt
2 pinches of thyme.

Method:

Boil water and put into it washed and drained quinoa. Add a pinch of salt and simmer for twenty minutes. Drain the quinoa and let it cool. On a dry pan fry especially sunflower seeds, pumpkin, flax and sesame seeds. Finely chop arugula. Make a dressing of olive oil, thyme, salt and asafoetida. In a large bowl, combine the cooked quinoa, sunflower seeds, sesame seeds, flax seeds, pumpkin seeds, corn and arugula. Pour salad with sauce and stir well!
