potato sabji with fried grains

Ingredients:

5 large potatoes (chopped into slices),

2 large carrots (cut into slices),

handful of rye whole grain, crushed,

a handful of sesame grain,

pinch of asafoetida,

pinch of roman cumin,

pinch of ajwan,

1/2 teaspoon of curry powder,

1/2 teaspoon of garam masala,

one teaspoon of dry parsley,

one teaspoon of oregano,

salt to taste,

pinch of ground black pepper,

pinch of turmeric,

1 big tablespoon of ghee, or olive oil.

Method:

Heat the pot and put  into it the ghee or olive oil. When is warm put into it roman cumin, ajwan, asafoetida, rye whole grain and sesame grain , stir a few seconds and add a sliced carrots. Stir a little and put the lid on the pot. After few minutes add a potatoes. Add salt, ground black pepper and  curry powder. Stir it and put the lid on the pot and cook on the low heat to fry potatoes and carrots in its own steam. Add a little water if necessary, in the case that the potato is adhered to the bottom of the pot. If not, it is better without adding the water. Sabji should be done after 15-20 minutes and then add the other ingredients: 1/2 teaspoon of garam masala, one teaspoon of dry parsley, pinch of turmeric, one teaspoon of oregano. Mix all well and remove from heat. This kind of sabji is very simple and very delicious, and roasted cereal seeds give it a nice taste. Serve it together with chapati and little sour cream, or maybe you can add and rocket salad (arugula). If you like it hot, put some dry and ground chilli at the end. Enjoy it!

Ps. If you dont have garam masala, or any other spices any other masala will do, and curry powder alone will be enough also.
