Morning vegetarian omelette

Preparation time : 20 minutes

Ingredients :

200 gr chopped  mushrooms ,

1 green pepper diced ,

250g cheese cottage cheese  or plain tofu ,

2 vegetarian hot dogs,

2 or 1 small tofu sausage cut into cubes,

100 g smoked seitan ,tofu or smoked cheese ,


three less ripe tomatoes cut in half ( even better cherry tomatoes ) ,

1 cup cooked corn ,

chopped fresh parsley for sprinkling

2 tablespoons oil or butter ,

a little chives ,

1-2 teaspoons salt ,

1/2  teaspoon of turmeric ,

1/2 teaspoon of curry,

sweet peppers and pepper ,

2 tablespoons of sour cream and a little , little black salt.
Method :

Heat the oil or butter in a large skillet or wok on medium heat , add the peppers , mushrooms and chives and stir. When the vegetables are almost done, add the crumbled cheese or tofu , vegetarian hot dogs or tofu sausage , smoked seitan or tofu and stir for 2-3 minutes . Add half of the tomatoes , corn kernels , salt , sweet paprika , curry , black pepper and salt . Stir for another minute . Remove from heat , and if you did not put the smoked tofu or seitan , now add grated smoked cheese , stir in 2 tablespoons of sour cream and sprinkle with parsley .
