Chinese Vegetable Mixture – Baked With Tofu and Noodles

Ingredients: (for 2 persons)
• 225g smoked tofu, 1 red onion (peeled, halved, chopped into slices), 2 carrots (sliced diagonally into thin slices), 1/2 head of Chinese cabbage (washed and cut into thick slices), 125g Green Bean (legume), 125g broccoli (separated into small florets), 125g sweet corn (halved), 125g mushrooms (washed and cut into slices), 1 garlic clove (ground), piece of fresh ginger root (scraped), 1 tbsp cornflour, 2 tablespoons soy sauce, 1 tablespoon sugar, salt and pepper and other spices to taste.
Method of preparation:
Heat the oil in a wok. When it starts to smoke, put into it all the vegetables, chopped pieces of smoked tofu, garlic and ginger, and then simmer stirring constantly for 2-3 minutes until the vegetables are wilted, but still crisp. Put the cornflour in a small bowl and mix with soy sauce and sugar. Add that into the pan and simmer stirring constantly for another 1-2 minutes until the mixture thickens and get mixed with vegetables. Add Chinese powder with spices, salt and pepper to taste. Serve with pasta.
