Cheesecake That Simply Melts In Your Mouth

A light seasonal cheesecake will be hit on your desk this spring.
The unhealthy ingredients commonly used for the preparation of cheesecake are replaced here by healthy alternatives.
Making a dessert is very short because the cake does not need to be baked but you just need to mix all ingredients and then put layer by the layer.
You need just a little imagination to decorate, and you can also use seasonal edible flowers.
Use a fruit dressing – simply mix strawberries, blackberries, raspberries or some other fruit with honey, without cooking.
This will delight you with acidic-sweet tastes of creamy cheesecake that literally melt in your mouth!
Substrate ingredients:
½ cup almonds
10 dates
½ tablespoons of cocoa
2 tablespoons of coconut oil
A pinch of Himalayan salt
1 teaspoon of vanilla extract.

Ingredients for the cream part:
½ cup of Indian nuts
6 teaspoons of Greek yogurt
200 g of fresh cow cheese
3 tablespoons of honey
1 teaspoon of vanilla extract
Juice of half a lemon.

Creams for thickening:

2 teaspoons powdered agar agar
½ cups of water
* Cup = 2.5 dl.
The recipe is adapted to a smaller cake mold (about 16 cm in diameter). For larger mold, double the ingredients.
Preparation:
Leave Indian nuts in the water for at least 4 hours. Drain them and rinse them.
Mix the almonds to the floury structure for the substrate. Add dates, salt, vanilla and cocoa and mix until you get a compact adhesive mixture.
Lay a smaller mold on the transparent foil cake and evenly apply a mixture at the bottom of the mold.
Place Indian nuts in a blender, add 2 tablespoons of water and mix to a smooth texture. Add the other ingredients (yogurt, cheese, vanilla, lemon juice and honey) and mix until you get the cream.
To melt the cream mix agar agar with water then shortly cook. Reduce the temperature and stir it for another 1 minute. Cool the preparation and mix in the cream.
Spread the cream evenly on the substrate. Put it in the refrigerator for at least 2 hours.
Decorate with edible spring flowers before serving.
Serve with chilled fruit juice and enjoy a light and healthy dessert
