Carrot salad with fried seeds, fresh basil, olives and smoked tofu

Ingredients:

2 big carrots, grated,

handful of olives, finely chopped (black, green),

100g smoked tofu or cheese, grated,

2 tablespoons sesame seeds,

2 tablespoons sunflower seeds,

10-15 fresh basil leaves, chopped,

pinch of fresh or dry parsley,

1 teaspoon of oregano,

1 big tablespoon of extra virgin olive oil,

1 teaspoon of lemon juice,

salt to taste (i use black salt),

pinch of freshly ground black pepper.

Method:

Fry in a dry pan sesame and sunflower seeds until they get golden colour.

Prepare and wash the leaves of fresh basil and then chop them.

Grate carrot and mix well with all ingredients.

Serve it with your favourite vegetarian meal; sabji, chapati and cheese…etc.
