Carrot salad recipe (suitable for ekadasi)

Ingredients:

2 big carrots, grated,

handful of olives, finely chopped (black, green),

50 g salted greek feta cheese,cut into cubes,

pinch of fresh or dry parsley,

1 teaspoon of oregano,

1 big tablespoon of extra virgin olive oil,

1 teaspoon of lemon juice,

salt to taste (i use black salt),

pinch of freshly ground black pepper.

Method:

Grate carrot and mix well with all ingredients. Serve it with your favourite vegetarian meal; sabji, chapati and cheese…etc.
