Buckwheat is a seed plant Fagopyrum esculentum which belongs to the family Polygonaceae.

This plant originally comes from Asia.

From 10 to 13 century buckwheat is widely cultivated in China, then is spreaded to Europe and Russia, and later in America.

Buckwheat is now the most popular in Russia and Poland where plays an important role in traditional cooking.

It is also widely used in the United States, Canada and France – a country that is known for Crepes – pancakes made of buckwheat flour.

Although one might think that the buckwheat is grain, that is not true.

Although in cooking buckwheat is considered as grain because of its nutritional structure, in botanical perspective buckwheat belong to the category of “leafy vegetables”, and sometimes is considered as fruit.

Buckwheat flowers are very aromatic, which attract bees that use them to have made a special honey, which has a dark color, strong aroma and special medicinal properties.

It is also very often used buckwheat flour, which can have a darker or lighter color. Darker flour contains more nutrients.
