Asparagus With Miso Dressing

Ingredients:

90 g of miso, garlic clove (grated), 30 ml of soy sauce, 100 ml of vegetable oil, 175 ml of rice vinegar, 8 cm sliced leek, deep frying oil, asparagus (about 300 g), several endive leaves, chili pepper (sliced).

Procedure:

Make the dressing mix with miso, soy sauce, garlic, oil and rice vinegar, and add some brown sugar if desired. Cut leek and then put them in the pan and then briefly fry in deep oil heated to 150 degrees Celsius until it becomes brown.
Then leave it to get dry for hours or two. Sprinkle asparagus in deep oil heated to 170 degrees centigrade for a minute or two. Serve asparagus on a plate, sprinkle them with fried leek, fresh endive, chili and pour over with dressing. Serve immediately.
