1. Native American Succotash

2 cups of corn,
1 cup of baby lima beans,
1 large chopped shallot,
2 cloves of garlic,
1 chopped roasted bell pepper,
1 tsp. of chopped fresh basil,
2 tsp. of chopped fresh parsley,
1 tsp. of chopped fresh thyme,
½ tbs. of sugar,
Juice from half of the lime

In a cooking pan put oil, then add corn, lima beans, shallot and garlic and cook for about 4 minutes until shallot changes color. When it looks all right add bell pepper, parsley, basil and thyme and stir it well. Leave it on heat for another minute or two. Add salt, pepper, lime juice and sugar. If it seems too dry for your taste you can add some water and leave it for another minute.

    What are the white cubes that look like cheese or tofu? I don’t see anything like that in the list of ingredients.

      I didn’t know these comments were about all of the recipes. My question about the white cubes/chunks is directed at the first recipe, Native American Succotash.

        This is one of the variants of this recipe. You can also add pieces of fresh hard cheese. Thnx.
